Mushroom Risotto with White Truffle Olive Oil

Mushroom Risotto with White Truffle Olive Oil

Ingredients

1 Lb. Assorted mushrooms, halved or sliced

1 Tsp. Dried thyme leaves

1 ½ Cups arborio rice

6 Tbsp. Butter Olive Oil, divided

½ Yellow onion, finely chopped

1 Cup dry white wine
-
4 Cups chicken or vegetable stock
-
½ Cup grated Parmesan, plus more for serving

3 Tbsp. White Truffle Olive Oil
-
1 Tsp. Champagne Wine Vinegar

Salt and pepper, to taste
Directions
Place a large pot over low-medium heat and add 2 Tbsp. of Butter Olive Oil. Once heated, add the mushrooms and salt, to taste.
After the mushrooms have lost their moisture, add the thyme leaves and stir to incorporate. Remove the mushrooms from the pot and set aside.
Add remaining 4 Tbsp. Butter Olive Oil to the pan. Add onions and fry until translucent.
Add the arborio rice to the pot and stir to coat the grains. Deglaze with white wine. Add warmed stock to the pot, one cup at a time, stirring continuously. Repeat until all the stock is gone.
Grate fresh Parmesan cheese into the risotto. Add the Champagne Wine Vinegar and mushrooms to the risotto.
Stir the White Truffle Olive Oil into the mixture and add salt and pepper to taste. Garnish with additional Parmesan, if desired. Enjoy!

You can substitute our Wild Mushroom & Sage Olive Oil in for truffle oil here to still get that savoury, earthy flavour in the risotto. Or go for Black Truffle Olive Oil, if that is what you have on hand!
