Ingredients

1 Kilogram potatoes, peeled and thinly sliced

2 Tbsp. Grated Parmesan cheese

2 Tbsp. Thyme Olive Oil, plus more for the pan

1 ½ Tbsp. All-purpose flour

2 Cups full-fat milk
-
½ Tsp. Nutmeg

⅓ Cup Gruyère cheese, grated

Salt and pepper, to taste
Béchamel Sauce
Directions
Preheat the oven to 375F. In a saucepan, heat the Thyme Olive Oil over medium heat.
- Add the flour and whisk continuously to create a roux. Cook for about 2 minutes until it's lightly golden.
Gradually pour in the milk, whisking constantly to avoid lumps. Continue cooking and stirring until the mixture thickens into a smooth sauce.
Stir in the grated Gruyère cheese into the sauce until it's fully melted and incorporated.
- Season the sauce with freshly grated nutmeg, salt, and pepper to taste.
Grease a baking dish with Thyme Olive Oil. Layer half of the sliced potatoes in the dish. Pour half of the béchamel sauce over the potatoes, ensuring they are evenly covered. Sprinkle with half the Parmesan.
Repeat the layers with the remaining potatoes, béchamel, and Parmesan.
- Cover the baking dish with foil and bake for 45-50 minutes or until the potatoes are tender.
- Remove the foil during the last 10-15 minutes of baking to allow the top to brown slightly.
Once the potatoes are cooked through and the top is golden, remove from the oven and let it rest for a few minutes to cool before serving.

For an extra crunchy dish, sprinkle some garlic bread crumbs on the potatoes after removing the foil. You can swap the Thyme Olive Oil for Herbes de Provence Olive Oil for some additional herbal flavour or try it with White Truffle Gourmet Olive Oil for the ultimate decadent feel!
