Gazpacho is often overlooked as a hot weather favourite, but you really can't beat the summery flavours and refreshing coolness! This version marries the classic flavours of cucumber, dill, and lemon together for the ultimate refresher. Plus, it comes together in a pinch in the blender!

Ingredients

5 Cups mini cucumbers, diced

1 Cup plain yogurt

1 Clove garlic

2 Tbsp. Honey

8-10 Fresh basil leaves

1 Tsp. Black pepper, freshly ground

1 Tsp. Lemon Twist Sea Salt

Extra Wild Dill Olive Oil and fresh dill for garnishing
Directions
Add all ingredients to a blender. Blend on low until mixed and then medium until thoroughly combined.
Pour gazpacho into a bowl. Top with a drizzle of Wild Dill Olive Oil and a sprig of fresh dill. Serve with crusty bread and enjoy!
