Ingredients

1 Can white beans

1 Can mixed beans

1 Bell pepper
-
½ Red onion

½ Cup corn kernels

¼ Cup Chimichurri Verde Olive Oil

3 Tbsp. Sicilian Lemon Balsamic

2 Cloves garlic, minced

Salt and pepper, to taste

1 Tsp. Mustard
-
¼ Tsp. Ground cumin
-
¼ Tsp. Smoked paprika
-
Fresh cilantro and lime to garnish
Dressing
Directions
Finely dice the bell pepper and red onion. Mix all the salad ingredients together.
Shake together all the dressing ingredients and pour over top. Stir in half of the cilantro (chopped) and garnish with the rest, as well as a squirt of lime to finish
