Watermelon Salad with Basil Olive Oil and Peach Balsamic

Ingredients

5 Cups watermelon, cubed

1 ½ Cups cucumber, diced

¼ Cup red onion, thinly sliced

¼ Cup Kalamata olives

⅓ Cup feta, crumbled

3 Tbsp. Basil Olive Oil
-
2 Tbsp. Ripe Peach Balsamic
-
½ Clove garlic, minced
-
1 Tsp. Dijon mustard
Dressing
Directions
Arrange the watermelon, cucumber, red onion and olives in a large bowl or platter.
Make the dressing by whisking the Basil Olive Oil, Peach Balsamic, garlic and dijon mustard in a bowl until emulsified. Season with salt and pepper as desired.
This recipe is also excellent by simply drizzling the Basil Olive Oil and Peach Balsamic on top of the salad.
Drizzle half the dressing on the salad and toss to combine. Add the feta and remaining dressing.
