Ingredients

3 Cups baby spinach

½ Cup blueberries

½ Red onion, thinly sliced

½ Cup feta, crumbled

⅓ Cup Milanese Gremolata Olive Oil

2 Tbsp. Thai Lemongrass Mint Balsamic

1 Tsp. Dijon mustard

Salt and pepper, to taste
Dressing
Directions
In a large bowl, add the spinach and red onion.
In a small bowl, add the dressing ingredients and whisk until emulsified. Drizzle and toss over the spinach and red onion until evenly covered
Top with blueberries and feta.
