Smash Burgers with Bacon Balsamic Onion Jam

Ingredients

1 Lb. Ground beef
-
2 Brioche or potato buns
-
¼ Cup goat cheese
-
1 Cup arugula
-
1 Tbsp. Garlic Olive Oil
-
4 Bacon strips sliced, chopped
-
¼ Cup onion, finely chopped
-
1 Garlic clove, minced
-
¼ Cup brown sugar
-
1 Tbsp. Blackberry Ginger Balsamic

Salt and pepper, to taste
Bacon Balsamic Onion Jam
Directions
Over medium heat, cook bacon until crispy, remove and set aside. Sauté onion in bacon fat, add garlic, sugar, balsamic, salt, and pepper. Cook until thick. Stir in bacon.
Heat a skillet or pan to medium. Add Garlic Olive Oil to the pan and place bun cut side down to toast for one minute or until desired. Set aside.
Form beef into patties and place on the same pan or skillet. Cover with parchment paper and press into a thin patty. Season with salt and pepper then cook two minutes per side until crispy.
To assemble place the patty on the bun, top with balsamic jam, goat cheese, and arugula.
