Ingredients

2 Tbsp. Spicy Calabrian Pesto Olive Oil

1 Cup heavy cream
-
4 Cloves garlic, minced and divided

1 ½ Cups freshly grated Parmesan cheese

Salt and freshly cracked pepper, to taste

Nutmeg, to taste

1 Cup raw shrimp
-
Fettucini
-
Parsley, to garnish
Directions
Add 1 Tbsp. Spicy Calabrian Pesto Olive Oil in a medium saucepan over medium-low heat. Add 2 cloves of minced garlic and heat until fragrant. Add shrimp and cook until pink. Remove and set aside.
To the same pan, add remaining olive oil and garlic. Add cream and bring to a simmer (lightly bubbling, not a full boil). Cook, whisking often, for 5 minutes until it starts to thicken slightly.
Add the cheese slowly (in two or three batches) and whisk constantly until melted. Add salt, pepper, and grated nutmeg, to taste.
If your sauce becomes too thick, you can thin it out with pasta water.
Cook pasta until al dente in salted boiling water. Drain and add to the pan with sauce along with cooked shrimp. Stir in parsley before serving.
