⅓ Cucumber

¼ Cup Suyo Cucumber Balsamic

¼ Cup water

1 Tsp. Sugar

1 Tsp. Salt

1.5 Lb. Flank steak (or skirt, or ribeye)

⅓ Cup grated pear
-
¼ Cup grated onion
-
2 Tbsp. Gravenstein Apple Balsamic

1 Tbsp. Dark Toasted Japanese Sesame Oil

1 Tsp. Black pepper
-
3 Green onions, sliced
-
½ Carrot, thinly sliced

Butter leaf lettuce

Directions
Pickles
Julienne the carrot and cucumber and add them to a small mason jar.
Combine Suyo Cucumber Balsamic, water, salt, sugar and bring to a boil in a small saucepan. Once boiling, pour over top of the carrot and cucumber.
Let sit until cooled to room temperature for quick pickle, or transfer to fridge overnight for more tender pickles.
Bulgogi
Slice the steak against the grain very thinly. Marinate at least 1 hour in the grated pear, onion, Gravenstein Apple Balsamic, Sesame Oil, black pepper, and the whites from the green onions.
Add meat to smoking hot dry cast iron pan, spread evenly in the pan so you get colour and not steam. Do not continually stir, let it cook for 3-4 minutes until the beef starts to brown.
Add thinly sliced carrot, and toss to mix and finish cooking the beef. Once cooked through, add the greens from the green onions and sprinkle with sesame seeds.
Serve with rice in lettuce wraps, topped with the quick pickles.
