This ramen is packed full of flavour, from the rich miso broth to the marinated eggs and pork belly on top. Sauté mushrooms, ginger, garlic, and shallots in Dark Toasted Japanese Sesame Oil until fragrant. Add ground pork, cook through.
Add in miso, spicy soy bean paste, tahini and mix together. Add in mirin, sake and mix to combine. Add in chicken broth, mix to combine and bring to a simmer. Do not bring to a boil. Add salt and white pepper to taste.
Slice and torch or broil chasu (pork belly) slices. Boil noodles and add to a bowl. Ladle over broth, then garnish with chasu, egg, corn, sprouts, green onions, and nori.
