Chili Lime Chicken with Persian Lime Olive Oil

Ingredients

2 Chicken breasts

1 Tbsp. Persian Lime Olive Oil

1 Clove garlic, minced

¼ Tsp. Chili powder

¼ Tsp. Smoked paprika

¼ Tsp. Onion powder
-
¾ Cup rice
-
1 ½ Cups stock
-
Cilantro and lime, to garnish

Salt and pepper, to taste
Directions
In a bowl, mix together garlic, lime olive oil, spices, salt and pepper. Pour over chicken breasts in a shallow dish. Allow to marinate for at least 1 hour.
Cook rice in stock. Add salt and pepper to taste once cooked.
Remove chicken from marinade and grill until completely cooked through, flipping halfway.
Plate a serving of rice with one chicken breast. Garnish with cilantro and lime, if desired.
