Ingredients

2 Cups cooked chicken breast, thinly sliced

6 Cups spinach

1 Cup sliced fresh strawberries

½ Cup pecans, chopped and toasted

½ Cup crumbled goat cheese

¼ Cup red onion, thinly sliced

¼ Cup Basil Olive Oil

¼ Cup Strawberry Balsamic

1 Tsp. Dijon mustard

Salt and pepper, to taste
Dressing
Directions
In a small jar, combine the Strawberry Balsamic, Basil Olive Oil, and Dijon mustard. Whisk or shake vigorously until the ingredients are fully incorporated and emulsified. Season with salt and pepper to taste.
In individual salad bowls, layer the spinach, sliced strawberries, toasted pecans, crumbled goat cheese, and red onion.
Arrange the thinly sliced cooked chicken breast on top of the salad. Drizzle the dressing on top and enjoy!
