Ingredients

1 Wheel of Brie cheese

1 Cup blueberries

1 Tbsp. Lavender Balsamic

¼ Cup pecans, chopped

Thyme, to garnish

1 Baguette, sliced into 1/2-inch thick pieces

2 Tbsp. Thyme Olive Oil

Salt and pepper, to taste
Directions
Preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and drizzle with the Thyme Olive Oil. Sprinkle with salt and pepper. Toast in the oven for 8-10 minutes, or until the crostini are golden brown and crisp.
In a saucepan on medium heat, heat the blueberries until they are bubbling and juicy. Add the Lavender Balsamic and cook, stirring occasionally, until the blueberries burst and the mixture thickens slightly, about 10-12 minutes. Remove from heat and set aside.
Slice off the top rind of the wheel of brie and place in a small baking dish or on a parchment-lined baking sheet. Bake the brie in the preheated oven for 10-12 minutes, or until the cheese is soft and gooey.
Carefully place the hot brie on a serving tray and spoon warm compote on the top. Garnish with diced pecans and fresh thyme.
