A classic arugula salad gets a citrusy twist with a dressing of Herbes de Provence Olive Oil and Grapefruit White Balsamic. And of course, don't forget the Parmesan for that salty kick!

Ingredients

4 Cups arugula

1 Grapefruit, segmented

¼ Cup Parmesan shavings

⅓ Cup Herbes de Provence Olive Oil

3 Tbsp. Grapefruit White Balsamic

1 Tsp. Dijon mustard

Salt and pepper, to taste

½ Clove garlic, minced
Dressing
Directions
In a bowl, arrange arugula with grapefruit segments and Parmesan on top.
Dressing
Whisk together all dressing ingredients in a bowl, or blend in a food processor.
Drizzle the dressing over the salad and enjoy!
