Spotlight: Garlic Infused Olive Oil

There is an unspoken rule about recipes. When deciding how much garlic to add, you never use only what is called for. When a recipe calls for two garlic cloves in a family-sized serving of pasta, we all understand that is the bare minimum before adding your own dose of garlicky goodness. Garlic bulbs contain fructans, a type of fermentable oligosaccharide, or the FO in FODMAP. But most of garlic's signature flavour doesn’t come from these fructans. It comes from a rich blend of pungent sulphides that bloom with the heat of cooking.
