Raw Peach and Tomato Salsa

This is a quick, flavourful salsa with both sweetness and spice. Serve with tortilla chips or on top of tacos. - Colin


1 large tomato
1 jalapeño pepper

¼ red onion
1 jar (398 ml) canned peaches, juice discarded
1 tbsp. dried cilantro
1 ½ tbsp. Ripe Peach Balsamic Vinegar

Salt and pepper to taste


1. Chop the tomato, jalapeño and onion into large chunks.
2. Combine in a food processor and pulse with remaining ingredients until fine, but still chunky. 

Makes about 2 cups.
